Hey Cam!
That feature is done using what is called a “Junction Point”, what you might be able to do is reconfigure it from the commandline (I know, joy!)
Here is the best link I could find covering it, I’m sure there are others, but it seems pretty straight forward:

Let me know how you get on,
Daniel
I think the welcome screen should read;
Welcome to Windoze Vista! (Now you’re screwed.)
I think this is a shell folder, rather than a file system symlink.
I’m not on Vista at the moment, but it looks like Windows can’t find your Documents folder at all, hence it can’t display the properties for the folder as it’s pointing to nothing, or to a folder that doesn’t exist.
Anyway, try this – it works on XP, but not sure with all of Vista’s security stuff. Open up regedit, navigate to HKEY_CURRENT_USERSoftwareMicrosoftWindowsCurrentVersionExplorerShell Folders. In XP, the relevant entry to edit is called Personal. Change that entry to the path to your external drives. A reboot may be necessary afterwards.
P.S. It’s funny how fast the global anti-Microsoft crew mobilises whenever such issues exist, yet they all go quiet when a similar issue happens on their OS.

Thanks Sam and Uncle Nick! That did the trick.
Coolio, dude.
